Vegan Peach Banana Bread Loaf
Ingredients
- 1 3/4 cups flour
- 1/2 cup oat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 cup brown sugar
- Pinch of salt
- 1/2 teaspoon cinnamon
- 3 medium very ripe bananas
- 1 cup plant-based milk mixed with 1 heaping tablespoon lemon juice and curdled
- 1/2 cup coconut oil, melted
- 2 tablespoons vegan butter
- 1 large peach
- Store-bought vegan cream cheese
- 1/2 cup icing sugar
Preparation
Preheat oven to 350°F.
Mix all wet ingredients well.
Mix dry ingredients well.
Fold wet ingredients into dry and mix thoroughly.
Fold in diced peaches.
Line a loaf pan with parchment paper and grease the sides.
Bake for 75 minutes.
Icing
Mix store-bought vegan cream cheese with 1/2 cup icing sugar to create the icing.
Notes
Let the plant-based milk and lemon juice mixture curdle before using.
Baking for 75 minutes ensures the loaf does not collapse; shorter baking times may cause issues.
Using parchment paper prevents the sides from burning.
