Vegan Peach Banana Bread Loaf

Ingredients

  • 1 3/4 cups flour
  • 1/2 cup oat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 cup brown sugar
  • Pinch of salt
  • 1/2 teaspoon cinnamon
  • 3 medium very ripe bananas
  • 1 cup plant-based milk mixed with 1 heaping tablespoon lemon juice and curdled
  • 1/2 cup coconut oil, melted
  • 2 tablespoons vegan butter
  • 1 large peach
  • Store-bought vegan cream cheese
  • 1/2 cup icing sugar

Preparation

  1. Preheat oven to 350°F.

  2. Mix all wet ingredients well.

  3. Mix dry ingredients well.

  4. Fold wet ingredients into dry and mix thoroughly.

  5. Fold in diced peaches.

  6. Line a loaf pan with parchment paper and grease the sides.

  7. Bake for 75 minutes.

Icing

  1. Mix store-bought vegan cream cheese with 1/2 cup icing sugar to create the icing.

Notes

  1. Let the plant-based milk and lemon juice mixture curdle before using.

  2. Baking for 75 minutes ensures the loaf does not collapse; shorter baking times may cause issues.

  3. Using parchment paper prevents the sides from burning.
