Vegan Banana Blueberry Bread

Ingredients

  • 2 flax eggs (2tbsp chia/flax meal with 8 tablespoons of water)
  • 1 cup of coconut sugar or granulated sugar
  • 3/4 cup of mashed banana
  • 1/2 cup of coconut oil, melted
  • 1/2 cup of plant based milk
  • 2 cups of all purpose flour
  • 2 tsp of baking soda
  • 1 tsp of cinnamon
  • A dash of salt
  • 3/4 cup of blueberries (tossed with 1 tablespoon of flour)

Preparation

  1. Preheat your oven to 350F and prepare 3 mini loaf pans.

  2. Add all your wet ingredients and mix well.

  3. Add your dry ingredients and stir until just combined.

  4. Fold in your blueberries carefully.

  5. Bake for 45-55 minutes and let them cool completely.

Tips

  1. You can add all ingredients into one bowl for simplicity.
