Vegan Banana Blueberry Bread
Ingredients
- 2 flax eggs (2tbsp chia/flax meal with 8 tablespoons of water)
- 1 cup of coconut sugar or granulated sugar
- 3/4 cup of mashed banana
- 1/2 cup of coconut oil, melted
- 1/2 cup of plant based milk
- 2 cups of all purpose flour
- 2 tsp of baking soda
- 1 tsp of cinnamon
- A dash of salt
- 3/4 cup of blueberries (tossed with 1 tablespoon of flour)
Preparation
Preheat your oven to 350F and prepare 3 mini loaf pans.
Add all your wet ingredients and mix well.
Add your dry ingredients and stir until just combined.
Fold in your blueberries carefully.
Bake for 45-55 minutes and let them cool completely.
Tips
You can add all ingredients into one bowl for simplicity.
