Vegan Spicy Pear Bread
Ingredients
- 3 cups wholewheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 Tbsp ground cinnamon
- 2 tsp ground cardamom
- 1 cup walnut pieces
- 3/4 cup coconut oil, melted
- 3 chia eggs
- 1 cup coconut sugar
- 2 cups grated pear
- 2 tsp vanilla extract
- 1/2 tsp almond essence
Preparation
Heat your oven to 180C and lightly grease and line a loaf tin.
Prepare your chia eggs by mixing 3 tbsp of chia seeds with 9 tbsp of water and set aside for 10 minutes.
Whisk together the flour, baking soda, baking powder, salt, and spices in a large bowl.
In a medium bowl, combine the melted coconut oil, chia eggs, coconut sugar, grated pear, walnut pieces, vanilla extract, and almond essence and stir to combine.
Gently fold the pear mixture into the flour mixture.
Scrape the batter into the pan and bake for 60 to 70 minutes until a wooden skewer inserted in the centre comes out clean.
Tips
To replace eggs in baking, use plant-based yoghurt, fruit or vegetable purees, flax or chia seeds, tapioca, cornstarch, arrowroot, aquafaba, or silken tofu based on their function such as binding, leavening, or adding flavor and texture.
For butter substitutes, use neutral oils like canola or avocado oil in a 1:1 ratio, olive oil for flavor-specific recipes, coconut oil for pastry and cookies, coconut milk or cream for milk or heavy cream, or nut butter combined with oil for denser bakes.
Replace honey with an equal amount of maple syrup or agave nectar for vegan options.
