Swedish Style Cinnamon Cardamom Sugared Buns

Ingredients

Dough

  • 815g bread flour
  • 1 tsp baking powder
  • 100 ml organic caster sugar
  • 2 tsp ground cardamom
  • a pinch of salt
  • 200g vegan buttery spread
  • 50g fresh yeast or 5 tsp dry yeast
  • 405ml room-temperature plant milk
  • 75 ml pureed silken tofu or plant yogurt

Filling

  • 75g vegan buttery spread
  • 65g organic caster sugar
  • 4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 tsp vanilla powder

Topping

  • 65g organic caster sugar
  • 1/4 tsp vanilla powder
  • 1/2 tsp ground cardamom
  • 50g vegan buttery spread, melted

Preparation

  1. Dissolve yeast in warm plant milk with a little sugar and let it activate.

  2. In a large bowl, mix bread flour, baking powder, caster sugar, ground cardamom, and salt.

  3. Add the activated yeast mixture, remaining wet ingredients, and vegan buttery spread to the dry ingredients, then knead until a smooth dough forms.

  4. Cover the dough and let it rise in a warm place until doubled in size.

  5. While the dough rises, prepare the filling by mixing vegan buttery spread, caster sugar, ground cinnamon, ground cardamom, and vanilla powder into a paste.

  6. Once risen, roll out the dough into a rectangle and spread the filling evenly over it.

  7. Roll up the dough tightly, cut into 32-40 buns, and place them on a baking tray.

  8. Cover and let the buns rise again until puffy.

  9. Preheat the oven to the appropriate temperature for baking buns.

  10. Bake the buns until golden brown and cooked through.

  11. Prepare the topping by mixing organic caster sugar, vanilla powder, and ground cardamom.

  12. Brush the baked buns with melted vegan buttery spread and sprinkle with the topping mixture.
