Vegan Double Gingerbread Waffles

Ingredients

  • 2 cups plant based milk
  • 1 teaspoon apple cider vinegar
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut or brown sugar
  • 2 Tablespoons canola or melted coconut oil
  • 2 Tablespoons fresh ginger
  • 2 Tablespoons crystallized ginger
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon ground cardamom

Preparation

  1. Preheat your waffle iron. I use a non-stick waffle iron, but any should work.

  2. Add plant based milk and apple cider vinegar to a small bowl and allow to curdle. You’ve just made vegan buttermilk!

  3. Add molasses, vanilla extract, sugar, and oil to milk mixture. Grate fresh ginger directly into the bowl. Finely chop crystallized ginger and add to the bowl. Stir well.

  4. In a large bowl, whisk flours, baking powder, cinnamon and cardamom. Add wet ingredients to dry and mix until no lumps remain.

  5. Cook following your waffle maker's direction, using about 1/2 cup batter per waffle. Cook until crispy and delicious!

Notes

  1. This recipe makes 4-5 large waffles.
