Baked Vegan Apple-Core Donuts
Ingredients
- 4-5 apples, sliced with core removed
- 1 cup whole wheat flour
- 1/2 cup date sugar
- 1 teaspoon baking powder
- A pinch of salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup + 2 tablespoons plant milk
- 1 flax egg (1 tablespoon ground flax seeds mixed with 3 tablespoons water, set for 10 minutes)
- 1 tablespoon melted vegan butter
- 1 teaspoon vanilla extract
Optional
- Cinnamon and sugar mixture for rolling after baking
Preparation
Preheat the oven to 180°C.
Mix all the dry ingredients together in a bowl.
Prepare the flax egg and set aside.
Cut the apples into thin slices with a hole in the middle.
Add the remaining ingredients and the flax egg to the bowl and whisk until well combined.
Dip the apple slices into the batter to coat them well and place them in a donut pan or a similar mold to create a donut shape.
Bake in the oven for about 10 minutes or until golden brown.
Tips
If a donut pan is unavailable, use a muffin pan and create a hole in the middle to simulate a donut shape.
Optionally, roll the baked donuts in a cinnamon and sugar mixture for extra flavor.
