Vegan Baked Donuts with Apple Core

Ingredients

  • 4-5 apples, sliced with core removed
  • 1 cup whole wheat flour
  • 1/2 cup date sugar
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup + 2 tablespoons plant milk
  • 1 flax egg (1 tablespoon ground flax seeds mixed with 3 tablespoons water, set for 10 minutes)
  • 1 tablespoon melted vegan butter
  • 1 teaspoon vanilla extract

Optional

  • Cinnamon and sugar mixture for rolling

Preparation

  1. Mix all the dry ingredients together in a bowl.

  2. Prepare the flax egg and set aside.

  3. Prepare the apples by cutting them into thin slices with a hole in the middle.

  4. You will need a donut pan or something similar to shape the donuts; a muffin pan can be used by creating a hole in the middle.

  5. Add the plant milk, melted vegan butter, vanilla extract, and the flax egg to the bowl and whisk until everything is well combined.

  6. Dip the apple slices into the batter, ensuring they are well covered, and place them onto the donut pan. Alternatively, place some batter in the pan, add an apple slice, and cover with more batter.

  7. Bake in the oven at 180°C for around 10 minutes or until golden brown.

Optional finishing

  1. Roll the baked donuts in a cinnamon and sugar mixture.
