Vegan Apple Almond Muffins

Ingredients

  • 230g (2 cups) all-purpose flour
  • 250ml (1 cup) plant milk of choice
  • 2 large apples, grated
  • 4 tablespoons apple sauce
  • 2 tablespoons corn starch
  • Juice of half a lemon
  • Pinch of salt
  • 75ml (1/4 cup) coconut oil or other oil
  • 1 teaspoon baking powder
  • 40g (1/4 cup) chopped almonds
  • 90g (1/2 cup) date sugar

Preparation

  1. Mix all the dry ingredients in a bowl.

  2. In a separate bowl, place the milk and lemon juice, stir, and let it sit for a minute.

  3. Add the dry ingredients and stir well together.

  4. Add the apple sauce, grated apples, almonds, and oil, and stir until everything is well combined.

  5. Place the mixture in a muffin baking form lined with parchment paper or greased.

  6. Garnish with some extra almonds.

  7. Bake for around 20 minutes at 180°C.
