Vegan Chocolate Banana Muffins

Ingredients

Dry

  • 1 1/2 cup whole wheat flour
  • 1/2 cup cacao powder
  • 2 1/2 tsp baking soda
  • 1/4 tsp salt

Wet

  • 1/3 cup coconut sugar
  • 2 1/2 ripe bananas
  • 3/4 cup non-dairy milk
  • 2 tbsp coconut oil (same amount of applesauce for no-oil)

Preparation

  1. Preheat oven to 350°F (180°C).

  2. In a bowl, mix together the dry ingredients until well combined.

  3. Add the wet ingredients to a blender and blend until smooth.

  4. Stir the blended mixture into the dry ingredients.

  5. Divide the mixture into 10-12 muffin tins, filling them 3/4 full.

  6. Bake for 20-25 minutes.

  7. Top with melted chocolate and some chopped brazil nuts.
