Vegan Chocolate Banana Muffins
Ingredients
Dry
- 1 1/2 cup whole wheat flour
- 1/2 cup cacao powder
- 2 1/2 tsp baking soda
- 1/4 tsp salt
Wet
- 1/3 cup coconut sugar
- 2 1/2 ripe bananas
- 3/4 cup non-dairy milk
- 2 tbsp coconut oil (same amount of applesauce for no-oil)
Preparation
Preheat oven to 350°F (180°C).
In a bowl, mix together the dry ingredients until well combined.
Add the wet ingredients to a blender and blend until smooth.
Stir the blended mixture into the dry ingredients.
Divide the mixture into 10-12 muffin tins, filling them 3/4 full.
Bake for 20-25 minutes.
Top with melted chocolate and some chopped brazil nuts.
