Banana Bread with Chocolate Frosting
Ingredients
Banana bread
- 450g ripe bananas
- 150g oats (3/4 cup)
- 50g ground almonds or 50g oat flour (1/3 cup or 1/4 cup)
- 50g coconut sugar (5 tbsp)
- 75g maple syrup
- 1 tsp baking powder
- 1/2 tsp baking soda
- 75g almond or oat milk
- 2 packs of Nugglets
- 100g chopped dark chocolate
- Sprinkle of sea salt
- Extra Nugglets for topping
Chocolate frosting
- 130g smooth nut butter (1/2 cup)
- 8g cacao powder (1 tbsp)
- 125ml maple syrup (1/2 cup)
- A pinch of salt
Preparation
Preheat the oven to 180°C (350°F) and grease a loaf pan.
Mash the ripe bananas in a bowl.
In another bowl, mix the oats, ground almonds or oat flour, coconut sugar, baking powder, and baking soda.
Add the mashed bananas, maple syrup, and milk to the dry ingredients and stir until combined.
Fold in the Nugglets and chopped dark chocolate.
Pour the batter into the prepared pan and sprinkle with sea salt and extra Nugglets.
Bake for 50-60 minutes or until a toothpick inserted comes out clean.
Allow the bread to cool completely in the pan.
For the frosting, combine the smooth nut butter, cacao powder, maple syrup, and a pinch of salt in a bowl and mix until smooth.
Spread the frosting evenly over the cooled banana bread.
Slice and serve.
