Date Nut Banana Bread

Ingredients

Wet

  • 1 flax egg (1tbsp ground flaxseed + 2.5 tbsp filtered water)
  • 1 c ripe mashed bananas
  • 1/4 c maple syrup
  • 2 tbsp almond milk

Dry

  • 1 c spelt flour
  • 3/4 c oat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 c shredded coconut

Add-ins

  • 1/2 c soft pitted dates, finely chopped
  • 1/2 c chopped walnuts

Preparation

  1. Preheat oven to 350F and line a loaf pan with two flaps of parchment paper.

  2. For flax egg, combine 1tbsp ground flaxseed with 2.5tbsp filtered water and set aside for 5 minutes to gel.

  3. In a large bowl, mash bananas and then add in all wet ingredients.

  4. In another bowl, combine all dry ingredients except dates and walnuts.

  5. Add dry to wet and stir until combined.

  6. Fold in dates and walnuts.

  7. Transfer batter to prepared loaf pan and top with additional dates and walnuts, then bake for 40-45 minutes or until a toothpick comes out clean.

  8. Let cool completely in pan before slicing and serving.
