Date Nut Banana Bread

Ingredients

  • 1 flax egg (1 tablespoon ground flaxseed + 2.5 tablespoons filtered water)
  • 1 cup ripe mashed bananas
  • 1/4 cup maple syrup
  • 2 tablespoons almond milk
  • 1 cup spelt flour
  • 3/4 cup oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut
  • 1/2 cup soft pitted dates, finely chopped, plus more for sprinkling on top
  • 1/2 cup chopped walnuts, plus more for sprinkling on top

Preparation

  1. Preheat oven to 350F and line a loaf pan with two flaps of parchment paper.

  2. For flax egg, combine 1 tablespoon ground flaxseed with 2.5 tablespoons filtered water. Set aside for 5 minutes to gel.

  3. In a large bowl, mash bananas and then add in all wet ingredients.

  4. In another bowl, combine all dry ingredients except dates and walnuts.

  5. Add dry ingredients to wet and stir until combined.

  6. Fold in dates and walnuts.

  7. Transfer batter to prepared loaf pan and top with additional dates and walnuts. Bake for 40-45 minutes or until a toothpick comes out clean.

  8. Let cool completely in pan before slicing and serving.
