Easy Vegan Apple Bread

Ingredients

  • 1 cup apple sauce
  • 1/2 cup melted vegan butter
  • 1 tsp vanilla
  • 3/4 cup maple syrup
  • 1/2 cup almond milk
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 cup quick oats (or blended old fashioned oats)
  • 2 1/4 cups oat flour

Cinnamon cream cheese icing

  • 2 oz vegan cream cheese
  • 2 tbsp softened vegan butter
  • 3/4 cup powdered sugar
  • 1/2 tsp cinnamon

Preparation

  1. Preheat oven to 375°F.

  2. Mix together the apple sauce, melted vegan butter, vanilla, maple syrup, and almond milk then add baking powder, baking soda, and cinnamon and mix well.

  3. Add the quick oats and oat flour and mix until combined then pour the batter into a greased 9x5 loaf pan and optionally top with apple slices or omit if using frosting.

  4. Bake for 30 to 40 minutes depending on the loaf pan and oven temperature.

  5. Check for doneness with a toothpick test and serve immediately topped with cinnamon cream cheese icing.

  1. Mix the vegan cream cheese, softened vegan butter, powdered sugar, and cinnamon until smooth.
