Superfood Snickerdoodle Breakfast Cookies

Ingredients

  • 1 cup rolled oats
  • 1/2 cup oat flour
  • 1 flax egg (1 tbsp flax seed, 3 tbsp water)
  • 1/2 cup cashew butter
  • 1/4 cup maple syrup
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp cinnamon
  • 2 tbsp chia seeds
  • 2 tbsp hemp hearts

Cinnamon sugar coating

  • 1 tbsp coconut sugar
  • 1/2 tsp cinnamon

Preparation

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Combine all of the dry ingredients into a large bowl and mix.

  3. Add in the wet ingredients and mix until well combined.

  4. In a separate bowl, combine coconut sugar and cinnamon.

  5. Take a piece of the dough and roll into a ball shape then coat it in the cinnamon sugar mixture.

  6. Press down the ball and form into a cookie shape.

  7. Repeat for the remaining batter and bake for 15 minutes.

Tips

  1. You can make more or less cookies depending on the size.

  2. Try sandwiching cookies with dairy-free yogurt for a variation.
