Vegan Cinnamon Roll Baked Oatmeal
Ingredients
Oatmeal Bake
- 2 cups rolled oats
- 1/3 cup coconut sugar
- 2 tbsp applesauce
- 1 1/2 cups oat milk
- 2 tsp cinnamon
- 1 flax egg
- 1 tsp baking powder
Cinnamon Sugar Mixture
- 1/4 cup coconut sugar
- 2 tbsp applesauce
- 2 tsp cinnamon
Icing
- Melted coconut butter
Preparation
Make the flax egg by combining 1 tbsp flaxseed with 2 1/2 tbsp water. Mix well and set aside for 10 minutes.
In a large mixing bowl, combine the rolled oats, coconut sugar, applesauce, oat milk, cinnamon, and baking powder for the oatmeal bake.
Stir in the prepared flax egg into the oatmeal mixture.
Grease a baking dish (such as a pie dish) to prevent sticking.
Pour the oatmeal mixture into the greased baking dish.
Preheat the oven to 350°F (175°C).
In a small bowl, mix together the ingredients for the cinnamon sugar mixture.
If desired, transfer the cinnamon sugar mixture to a plastic bag and cut a hole in one corner to create a swirl effect.
Drizzle the cinnamon sugar mixture over the oatmeal mixture in the baking dish, creating a swirl pattern.
Optionally, swirl melted coconut butter over the top for added flavor.
Bake the oatmeal in the preheated oven for about 35 minutes, or until the top is golden brown and the oatmeal is set.
Once baked, remove the oatmeal from the oven and let it cool slightly.
Drizzle melted coconut butter over the top as icing.
Serve warm and enjoy!
