Superfood Snickerdoodle Breakfast Cookies

Ingredients

  • 1 cup rolled oats
  • 1/2 cup oat flour
  • 1 flax egg (1 tbsp flax seed, 3 tbsp water)
  • 1/2 cup cashew butter
  • 1/4 cup maple syrup
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp cinnamon
  • 2 tbsp chia seeds
  • 2 tbsp hemp hearts

Cinnamon sugar coating

  • 1 tbsp coconut sugar
  • 1/2 tsp cinnamon

Preparation

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Combine all of the dry ingredients into a large bowl and mix.

  3. Add in the wet ingredients and mix until well combined.

  4. In a separate bowl combine coconut sugar and cinnamon.

  5. Take a piece of the dough and roll into a ball shape then mix the dough around in the cinnamon sugar mixture.

  6. Press down the rolled ball and form into a cookie shape.

  7. Continue for the rest of the batter and bake for 15 minutes.

Tips

  1. This batter makes about 9 cookies, but you can make more or less depending on the size.

  2. Sandwich two cookies together with dairy-free yogurt for a variation.

  3. Enjoy the cookies.
