Superfood Snickerdoodle Breakfast Cookies
Ingredients
- 1 cup rolled oats
- 1/2 cup oat flour
- 1 flax egg (1 tbsp flax seed, 3 tbsp water)
- 1/2 cup cashew butter
- 1/4 cup maple syrup
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tbsp cinnamon
- 2 tbsp chia seeds
- 2 tbsp hemp hearts
Cinnamon sugar coating
- 1 tbsp coconut sugar
- 1/2 tsp cinnamon
Preparation
Preheat oven to 350 degrees Fahrenheit.
Combine all of the dry ingredients into a large bowl and mix.
Add in the wet ingredients and mix until well combined.
In a separate bowl combine coconut sugar and cinnamon.
Take a piece of the dough and roll into a ball shape then mix the dough around in the cinnamon sugar mixture.
Press down the rolled ball and form into a cookie shape.
Continue for the rest of the batter and bake for 15 minutes.
Tips
This batter makes about 9 cookies, but you can make more or less depending on the size.
Sandwich two cookies together with dairy-free yogurt for a variation.
