Peanut Butter Cookies

Ingredients

  • 1 cup peanut butter (or any nut/seed butter)
  • 1/2 cup coconut sugar
  • 1/2 cup oat flour (or tapioca flour)
  • 1 tsp baking powder
  • 1/2 tsp cinnamon (optional)
  • 1 tsp vanilla extract
  • 1/2 tsp salt (less if your peanut butter is salted)

Preparation

  1. Preheat the oven to 350ºF

  2. Combine all the ingredients in a bowl and mix

  3. Roll the dough into 12 balls, arrange on a lined baking sheet, press flat with a fork

  4. Bake for 15 minutes at 350ºF or until golden brown on the edges

  5. Remove from the oven and allow to cool for at least 15 minutes (they will be very delicate when hot)

  6. Eat! Keep leftovers in the fridge sealed up, or freeze for longer storage
