Vegan and Gluten-Free Monkey Bread
Ingredients
- 2 1/2 cups + 2 tbsp oat flour
- 3 tbsp arrowroot flour
- 1 cup oat milk
- 2 tsp apple cider vinegar
- 2 tbsp maple syrup
- 1 tsp vanilla
- Sprinkle of salt
- 2 tsp baking powder
Cinnamon sugar
- 1 1/2 tbsp cinnamon
- 1/3 cup coconut sugar
- 1/4 cup melted coconut oil
Icing
- Melted coconut butter
Preparation
In a small bowl, mix together the oat milk and apple cider vinegar and let it sit for 10 minutes.
While you wait for this, mix the cinnamon sugar ingredients together in another small bowl.
In a large mixing bowl, add the rest of the monkey bread ingredients.
Then add the oat milk and apple cider vinegar mixture.
Mix well.
Press it into a ball, you can add a tiny bit more oat flour if it’s pretty sticky.
Grease a small loaf pan.
Then grease your hands and roll little pieces of the dough into small balls. I made 15.
Dip them into the cinnamon sugar mixture and then add to the loaf pan.
Bake for 30-32 minutes at 350F.
Once you remove them, add coconut butter on top.
