Double Chocolate Chip Muffins

Ingredients

  • 1 ripe banana, mashed
  • 1/2 cup plant milk
  • 1 tsp vanilla extract
  • 3 tbsp peanut butter
  • 1/4 cup maple syrup
  • a pinch of salt
  • 110g spelt flour
  • 25g cocoa powder
  • 1/2 tbsp baking powder
  • 60g chocolate chips
  • 1 tsp hazelnut butter each

Preparation

  1. Preheat the oven to 175°C or 350°F.

  2. Mash the ripe banana.

  3. In a large bowl, mix together the mashed banana, plant milk, vanilla extract, peanut butter, maple syrup, salt, and hazelnut butter.

  4. In another bowl, combine the spelt flour, cocoa powder, and baking powder.

  5. Add the dry ingredients to the wet ingredients and stir until just combined.

  6. Fold in the chocolate chips.

  7. Spoon the batter into muffin cups.

  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
