Vegan Gluten-Free Banana Bread

Ingredients

  • 4 ripe bananas (3 for the mixture, 1 on top)
  • 300 grams oat flour
  • 3 tablespoons peanut butter
  • 2 chia eggs
  • 3 tablespoons coconut oil
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • A pinch of salt

Optional

  • 25 grams coconut sugar or other sweetener

Preparation

  1. Prepare the chia eggs by mixing 2 tablespoons of chia seeds with 5 tablespoons of water and letting it sit until it becomes sticky.

  2. Preheat the oven to 180 degrees Celsius.

  3. Mix all dry ingredients in a bowl.

  4. Mix all wet ingredients in a separate bowl.

  5. Add the dry ingredients to the wet ingredients and mix well.

  6. Pour the batter into a baking pan.

  7. Place the remaining banana on top.

  8. Bake for 40-45 minutes in the oven.
