Vegan Gluten-Free Banana Bread
Ingredients
- 4 ripe bananas (3 for the mixture, 1 on top)
- 300 grams oat flour
- 3 tablespoons peanut butter
- 2 chia eggs
- 3 tablespoons coconut oil
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon baking soda
- A pinch of salt
Optional
- 25 grams coconut sugar or other sweetener
Preparation
Prepare the chia eggs by mixing 2 tablespoons of chia seeds with 5 tablespoons of water and letting it sit until it becomes sticky.
Preheat the oven to 180 degrees Celsius.
Mix all dry ingredients in a bowl.
Mix all wet ingredients in a separate bowl.
Add the dry ingredients to the wet ingredients and mix well.
Pour the batter into a baking pan.
Place the remaining banana on top.
Bake for 40-45 minutes in the oven.
