5-Minute Healthy Mug Cinnamon Rolls

Ingredients

Dough

  • 1/2 of a large banana
  • 6 tbsp all purpose flour (paleo, gf, or regular all work!) +more if needed*
  • 1 tsp baking powder
  • 1-4 tablespoons almond milk (roughly 1 tbsp if using regular flour, 4 tbsp for gf, none for paleo - brands can be different though so start with less and add as needed)

Filling

  • 1 tablespoon coconut sugar
  • 1 tsp cinnamon
  • Coconut oil for brushing

Caramel

  • 1 heaping tablespoon coconut sugar
  • 1 tablespoon coconut milk cream (hardened thick white part on top of chilled or unshaken can)
  • Pinch salt

Preparation

  1. Mix dough ingredients together in a bowl until a thick dough forms

  2. Because different brands of flour blends can be different start with a little almond milk (none for paleo flour) and only add as needed

  3. If you add too much almond milk add a little more flour until a thick dough forms (not too much though or they will be too cakey)

  4. Dough should be thick but may be a bit sticky

  5. Roll out dough with hands on a floured surface (sprinkle flour on dough and hands to prevent sticking)

  6. Do not roll it too thin

  7. Brush with melted coconut oil

  8. Pour cinnamon sugar mixture on top

  9. Gently press cinnamon sugar mixture to avoid it spilling out

  10. Roll up dough

  11. Cut in 3 equal slices

  12. In a large, tall mug stir together coconut sugar, coconut milk cream, and salt

  13. Place sliced cinnamon rolls on top

  14. Microwave for about 90 seconds (microwave times may vary slightly)

  15. Let cool just slightly then enjoy

Tips

  1. Feel free to double the caramel if you like lots of caramel

  2. The mug used in the video was tall for visibility but caused spilling, so use a mug that can contain the mixture without overflow

  3. *I mean all purpose blends I haven’t tested oat, almond, etc individually
