Plant-Based Cinnamon Rolls #Glutenfree 🌱

Ingredients

  • 2 + 1/2 cups flour
  • 1/4 cup coconut oil
  • 1/3 cup coconut sugar
  • 1 cup almond/oat milk
  • 2 + 1/4 tsp yeast
  • 2 tbsp baking powder
  • 1/4 tsp salt
  • 1 tbsp cinnamon

Preparation

  1. In a glass bowl, melt the coconut oil and then add 1 tbsp of coconut sugar and milk.

  2. Heat the bowl again for 3 minutes. Remove from the microwave and add the yeast. Let it activate for 8 minutes.

  3. In another bowl, combine the flour, baking powder, and salt. Mix well and add the liquid mixture. Knead until a solid consistency is achieved (similar to cookie dough). Cover the bowl and let the dough rise in a warm place for about 30 minutes to 1 hour.

  4. Transfer the dough to a clean, flat surface and roll it out. The dough shouldn't be too thin to be easily transferred to a baking tray.

  5. For the filling, brush the rolled-out dough with coconut oil and sprinkle the remaining coconut sugar and cinnamon. Roll up the dough and cut into slices about 2 cm thick. You'll get around 10 rolls.

  6. Bake for 15-20 minutes until golden brown. Flip the rolls halfway through.

  7. For the glaze, use coconut yogurt from @alpro.
