Rainbow Vegan Pancake Stack
Ingredients
- 1 1/2 cups all purpose flour
- 2 Tbsp coconut sugar
- 1/2 Tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups almond milk
- 1 tsp olive oil
- 1/4 tsp vanilla extract
Preparation
Mix all dry ingredients together.
In a separate bowl mix all wet ingredients together.
Combine the wet and dry ingredients and mix until just combined; do not over mix, as the batter should be slightly lumpy.
Scoop 1/4 cup of batter per pancake onto a nonstick pan or griddle and cook over medium heat or 375 degrees if using a griddle.
Gently flip once the top starts bubbling. Cook the second side for about one minute or until thoroughly cooked.
Let cool slightly and enjoy.
