Festive Beetroot Pancakes

Ingredients

  • 200 g all purpose flour
  • 1 1/2 tbsp baking powder
  • 3 tbsp coconut sugar
  • 2 tbsp @unicornsuperfoods beetroot powder
  • 360 ml milk of choice
  • 1 1/2 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • a pinch of salt

Preparation

  1. Mix milk and vinegar and let the mixture sit for 5 minutes.

  2. In a large bowl mix together flour, baking powder, sugar, salt and beetroot powder.

  3. Pour liquids over dry, mix well and let the pancake batter sit for 5 minutes.

  4. Heat up a non-stick pan and start cooking the pancakes on low heat for about 1 minute per side.

Serving suggestions

  1. Serve warm with coconut yogurt and fresh raspberries.
