Festive Beetroot Pancakes
Ingredients
- 200 g all purpose flour
- 1 1/2 tbsp baking powder
- 3 tbsp coconut sugar
- 2 tbsp @unicornsuperfoods beetroot powder
- 360 ml milk of choice
- 1 1/2 tbsp apple cider vinegar
- 1 tsp vanilla extract
- a pinch of salt
Preparation
Mix milk and vinegar and let the mixture sit for 5 minutes.
In a large bowl mix together flour, baking powder, sugar, salt and beetroot powder.
Pour liquids over dry, mix well and let the pancake batter sit for 5 minutes.
Heat up a non-stick pan and start cooking the pancakes on low heat for about 1 minute per side.
Serving suggestions
Serve warm with coconut yogurt and fresh raspberries.
