Mocha Baby Pancakes
Ingredients
- 250 g all purpose flour
- a pinch of salt
- 3 tbsp unrefined cane sugar
- 10 g baking powder
- 1 tsp cinnamon
- 2 tsp superfoods mix (optional)
- 10 g instant coffee powder
- 1 ripe banana, mashed
- 400 ml plant-based milk
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
Preparation
In a large bowl add the first 7 ingredients on the list. Whisk well.
Add in the mashed banana, milk, vinegar and vanilla extract. Whisk some more to incorporate everything.
Heat up a nonstick pan and start forming tiny pancakes with the help of a spoon (they should have about 1.5 - 2 cm diameter).
The pancakes only take a few seconds to cook on each side so, keep an eye on them.
Serve warm.
