Mocha Baby Pancakes

Ingredients

  • 250 g all purpose flour
  • a pinch of salt
  • 3 tbsp unrefined cane sugar
  • 10 g baking powder
  • 1 tsp cinnamon
  • 2 tsp superfoods mix (optional)
  • 10 g instant coffee powder
  • 1 ripe banana, mashed
  • 400 ml plant-based milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract

Preparation

  1. In a large bowl add the first 7 ingredients on the list. Whisk well.

  2. Add in the mashed banana, milk, vinegar and vanilla extract. Whisk some more to incorporate everything.

  3. Heat up a nonstick pan and start forming tiny pancakes with the help of a spoon (they should have about 1.5 - 2 cm diameter).

  4. The pancakes only take a few seconds to cook on each side so, keep an eye on them.

  5. Serve warm.
