Matcha Blueberry Custard Waffles

Ingredients

  • 125g all purpose flour
  • 1 tbsp coconut sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 210ml plant-based milk
  • 1 tsp apple cider vinegar
  • 30 ml neutral oil
  • 1 tsp vanilla extract
  • 6 tbsp @love.legrand matcha vegan yogurt
  • 6 tbsp blueberry compote (blueberries cooked with monk fruit sweetener)

Preparation

  1. In a large measuring cup, combine plant-based milk and vinegar. Set aside.

  2. Combine dry ingredients in a bowl.

  3. Add remaining wet ingredients to the measuring cup with plant-based milk and ACV. Stir.

  4. Add wet ingredients to dry and whisk until just combined.

  5. Add two tablespoons of batter to your waffle maker and spoon on two tablespoons yogurt and two tablespoons blueberry compote. Top with another one to two tablespoons of waffle batter. Cook waffles according to your specific waffle maker’s instructions, roughly 2.5 to 3 minutes.

Serving suggestions

  1. Serve with sifted matcha and icing sugar and maple syrup. Enjoy!

  1. This recipe makes 3 large waffles.
