Rainbow Vegan Pancakes
Ingredients
- 1 1/2 cups all purpose flour
- 2 Tbsp coconut sugar
- 1/2 Tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups almond milk
- 1 tsp olive oil
- 1/4 tsp vanilla extract
Optional add-ins
- Superfood powder or food coloring to taste
Preparation
Mix all dry ingredients together.
In a separate bowl mix all wet ingredients together.
Combine the wet and dry ingredients and mix until just combined; do not over mix, batter should be slightly lumpy.
Scoop 1/4 cup of batter per pancake onto a nonstick pan or griddle and cook over medium heat or 375 degrees if using a griddle.
Gently flip once the top starts bubbling and cook the second side for about one minute or until thoroughly cooked.
Let cool slightly and enjoy.
Tips
Add your favorite superfood powder or food coloring to make rainbow pancakes.
