Vegan Orange Waffles with Almond Milk

Ingredients

  • 1 cup (115-120g) all-purpose flour (light spelt flour will work too)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of sea salt
  • 2 tbsp coconut sugar
  • 1/2 cup (120ml) almond milk
  • 1/3 cup (80ml) orange juice
  • 1 tbsp olive oil + more to grease the waffle iron

Preparation

  1. Mix dry ingredients in a mixing bowl

  2. Add wet ingredients and mix to combine

  3. Bake waffles in a hot waffle iron greased with a bit of oil

  4. Do not pour too much batter as the waffles need space to rise; baking time will depend on the temperature of your waffle iron, for reference it was 4-5 minutes

  5. Top with plant-based yogurt, fruit, and cacao nibs and enjoy
