Moist Vegan Banana Bread

Ingredients

  • 1 3/4c white wheat flour (sub ap, oat or wheat)
  • 1tsp baking soda
  • 1/2tsp baking powder
  • 1tsp cinnamon
  • 1/3c coconut sugar
  • 1 1/2c overripe mashed banana
  • 1/4c almond milk
  • 1tsp vanilla
  • 3/4c chocolate chips

Preparation

  1. Preheat oven to 350F and line a loaf pan with parchment paper

  2. Mash bananas in a large bowl, then stir in all wet ingredients

  3. Add in dry ingredients and stir until combined

  4. Fold in chocolate chips

  5. Transfer batter to lined loaf pan and top with extra chocolate chips

  6. Bake for 45-55 minutes or until a toothpick comes out clean

  7. Let cool in pan for 15 minutes, then transfer to a wire rack to cool completely. Slice and enjoy

Notes

  1. This banana bread is ultra moist and fluffy, completely vegan, and can be easily made gluten-free
