Moist Chocolate Chip Banana Bread Loaf

Ingredients

Dough

  • 120 g sugar
  • 2 medium eggs
  • 1 teaspoon vanilla extract
  • 200 ml neutral cooking oil (e.g., sunflower oil)
  • 3 medium bananas
  • 300 g all-purpose flour
  • 2 teaspoons baking powder
  • a pinch of cinnamon
  • 100 g chocolate chips
  • some fat for greasing the pan

Decoration

  • 1 banana
  • 1 teaspoon maple syrup

Preparation

  1. Grease a 23x10 cm loaf pan

  2. Preheat the oven to 180°C conventional (160°C fan)

  3. In a bowl, beat sugar, eggs, and vanilla extract until creamy

  4. Mix in oil

  5. Peel bananas and mash with a fork

  6. Mix mashed bananas into the batter

  7. In a separate bowl, mix flour, baking powder, and cinnamon

  8. Sift the flour mixture and stir into the batter

  9. Fold in chocolate chips by hand

  10. Pour the batter into the prepared loaf pan

  11. Smooth the top of the batter

  12. Peel one banana

  13. Cut the banana in half lengthwise

  14. Brush the banana halves with maple syrup

  15. Place the banana halves on the batter with the cut side up

  16. Bake for about 40 minutes

  17. Let cool on a wire rack for about 1 hour

  18. Turn out of the pan

Notes

  1. Yields about 14 slices

  2. Keeps in an airtight container at room temperature for at least 3 days
