Moist Chocolate Chip Banana Bread Loaf
Ingredients
Dough
- 120 g sugar
- 2 medium eggs
- 1 teaspoon vanilla extract
- 200 ml neutral cooking oil (e.g., sunflower oil)
- 3 medium bananas
- 300 g all-purpose flour
- 2 teaspoons baking powder
- a pinch of cinnamon
- 100 g chocolate chips
- some fat for greasing the pan
Decoration
- 1 banana
- 1 teaspoon maple syrup
Preparation
Grease a 23x10 cm loaf pan
Preheat the oven to 180°C conventional (160°C fan)
In a bowl, beat sugar, eggs, and vanilla extract until creamy
Mix in oil
Peel bananas and mash with a fork
Mix mashed bananas into the batter
In a separate bowl, mix flour, baking powder, and cinnamon
Sift the flour mixture and stir into the batter
Fold in chocolate chips by hand
Pour the batter into the prepared loaf pan
Smooth the top of the batter
Peel one banana
Cut the banana in half lengthwise
Brush the banana halves with maple syrup
Place the banana halves on the batter with the cut side up
Bake for about 40 minutes
Let cool on a wire rack for about 1 hour
Turn out of the pan

Yields about 14 slices
Keeps in an airtight container at room temperature for at least 3 days
