Five-Minute Vegan Cinnamon Rolls

Ingredients

Dough

  • 1/2 large banana
  • 6 tablespoons all-purpose flour (paleo, gluten-free, or regular; add more if needed)
  • 1 teaspoon baking powder
  • 1-4 tablespoons almond milk (adjust based on flour type; start with less and add as needed)

Filling

  • 1 tablespoon coconut sugar
  • 1 teaspoon cinnamon
  • Coconut oil for brushing

Caramel

  • 1 heaping tablespoon coconut sugar
  • 1 tablespoon coconut milk cream
  • Pinch of salt

Preparation

  1. Mix dough ingredients together in a bowl until a thick dough forms, adjusting almond milk based on flour type and adding more flour if needed to avoid stickiness.

  2. Roll out dough with hands on a floured surface, sprinkling flour on dough and hands to prevent sticking, and avoid rolling too thin.

  3. Brush with melted coconut oil.

  4. Sprinkle cinnamon sugar mixture on top and gently press it to avoid spilling.

  5. Roll up the dough and cut into 3 equal slices.

  6. In a large, tall mug, stir together coconut sugar, coconut milk cream, and salt.

  7. Place the sliced cinnamon rolls on top of the caramel mixture.

  8. Microwave for about 90 seconds, noting that times may vary.

  9. Let cool slightly before enjoying
