Fluffy Pumpkin Chocolate Chip Loaf
Ingredients
- 1/2 cup all-purpose flour (gluten-free 1:1 baking flour can be used)
- 1 cup almond flour
- 1/2 cup coconut sugar
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1/3 cup chocolate chips
- 1/4 cup almond milk
- 1/2 cup pumpkin purée
- 2 eggs
Preparation
Preheat the oven to 350°F (175°C) and prepare a loaf pan by spraying or lining it.
In a large bowl, whisk together the dry ingredients—flour, almond flour, coconut sugar, cinnamon, baking powder—then stir in the chocolate chips.
In a small bowl, whisk together the pumpkin purée, almond milk, and eggs until well combined.
Pour the wet ingredients into the bowl of dry ingredients and stir until the mixture is thoroughly combined.
Pour the batter into the prepared loaf pan, and for an extra touch, top it with additional chocolate chips.
Bake the loaf in the preheated oven for approximately 32 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the loaf from the oven and allow it to cool before slicing and serving.
