Coffee Cake Banana Bread with Crumb Topping

Ingredients

  • 1/2 cup all-purpose flour (gluten-free 1:1 baking flour recommended)
  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 2 small ripe bananas
  • 1/4 cup almond milk
  • 2 eggs
  • 1/3 cup melted butter (plant-based butter recommended)
  • 1/2 cup all-purpose flour (gluten-free 1:1 baking flour recommended)
  • 1/3 cup coconut sugar
  • 1 tsp. cinnamon

Preparation

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan by greasing or lining it.

  2. In a large bowl, mash the ripe bananas. Whisk in the almond milk and eggs until well combined.

  3. Add the all-purpose flour, almond flour, coconut sugar, baking powder, and cinnamon to the wet ingredients. Mix until just combined.

  4. Pour the batter into the prepared loaf pan, spreading it evenly.

  5. In a separate bowl, prepare the crumb topping by mixing melted butter, all-purpose flour, coconut sugar, and cinnamon. Stir until crumbly.

  6. Sprinkle the crumb topping evenly over the banana bread batter.

  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  8. Once baked, remove from the oven and let the banana bread cool slightly before slicing and serving.
