Chewy Homemade Sugar Cookies

Ingredients

  • 2 cups almond flour
  • 1/4 cup all-purpose flour (gluten-free baking flour can be used)
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • 1 egg
  • 1/4 cup almond butter
  • 1/4 cup almond milk

Preparation

  1. Preheat the oven to 350F and prepare a baking sheet with cooking spray or line it with parchment paper.

  2. In a large bowl, whisk together the almond flour, all-purpose flour, coconut sugar, and baking powder.

  3. In a small bowl, whisk together the egg, almond butter, and almond milk.

  4. Pour the wet ingredients into the dry ingredients and stir until well combined.

  5. Dust your countertop with extra all-purpose flour and roll out the dough.

  6. Use a regular-sized cookie cutter to make 13-15 cookies or a mini cookie cutter to make 38-40 cookies.

  7. Bake the regular-sized cookies for 8-10 minutes and the mini cookies for 5 minutes.
