Chewy Homemade Sugar Cookies
Ingredients
- 2 cups almond flour
- 1/4 cup all-purpose flour (gluten-free baking flour can be used)
- 1/2 cup coconut sugar
- 1 tsp baking powder
- 1 egg
- 1/4 cup almond butter
- 1/4 cup almond milk
Preparation
Preheat the oven to 350F and prepare a baking sheet with cooking spray or line it with parchment paper.
In a large bowl, whisk together the almond flour, all-purpose flour, coconut sugar, and baking powder.
In a small bowl, whisk together the egg, almond butter, and almond milk.
Pour the wet ingredients into the dry ingredients and stir until well combined.
Dust your countertop with extra all-purpose flour and roll out the dough.
Use a regular-sized cookie cutter to make 13-15 cookies or a mini cookie cutter to make 38-40 cookies.
Bake the regular-sized cookies for 8-10 minutes and the mini cookies for 5 minutes.
