Blueberry Chocolate Chip Donuts

Ingredients

  • 1 cup almond flour
  • 1/2 cup all-purpose flour (gluten-free, 1:1 ratio, e.g., @bobsredmill)
  • 1/2 tsp. baking powder
  • 1/2 cup coconut sugar
  • 1/2 cup almond milk
  • 2 eggs
  • 1/2 cup blueberries (frozen wild blueberries, e.g., @wymansfruit)
  • 1/4 cup chocolate chips (+ extra for topping, e.g., @enjoylifefoods mini chocolate chips)

Preparation

  1. Preheat the oven to 350°F (175°C) and spray the donut pan.

  2. In a high-powered blender or food processor, combine all the ingredients except the blueberries and chocolate chips. Start by adding the wet ingredients first.

  3. Gently stir in the blueberries and chocolate chips.

  4. Spoon the batter into the donut pans. This recipe yields 7-8 donuts. If you have a pan with only 6 slots, you can use a muffin tin for the excess batter.

  5. Bake for 10-12 minutes until the donuts are cooked through. Allow them to cool before proceeding.

  6. Once cooled, top the donuts with yogurt and extra chocolate chips.
