Microwave Double Chocolate Cake

Ingredients

  • 3 tbsp almond milk
  • 1 tbsp olive oil
  • 1 egg
  • 3 tbsp coconut sugar
  • 1/4 tsp baking powder
  • 3 tbsp all-purpose flour (or gluten-free baking flour)
  • 1 tbsp cacao powder
  • 2-3 tbsp chocolate chips

Preparation

  1. In a microwave-safe bowl or large mug, whisk together the wet ingredients (almond milk, olive oil, egg).

  2. Stir in the dry ingredients (coconut sugar, baking powder, flour, cacao powder) until well combined.

  3. Add chocolate chips to the batter and mix gently.

  4. Microwave the mixture for 1 minute and 40 seconds, or until the cake is fully cooked and firm to the touch.

  5. For the frosting, mix together Siggi's dairy vanilla yogurt, cacao powder, and coconut sugar.

  6. Once the cake is done, let it cool slightly, then top it with the yogurt-cacao frosting.
