Chocolate Chip Banana Bread Cookies
Ingredients
- 1 cup all-purpose flour (gluten-free 1:1 baking flour can be used)
- 1 & 1/2 cups almond flour
- 1/2 cup granulated sugar (coconut sugar can be used)
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 2 small ripe bananas (1/2 cup mashed)
- 1/4 cup almond milk
- 2 eggs
- 1/4 cup chocolate chips
Preparation
Preheat the oven to 350°F (175°C) and prepare a baking sheet with non-stick spray or parchment paper.
In a large bowl, mash the ripe bananas. Whisk in the almond milk and eggs until well combined.
Stir in the all-purpose flour, almond flour, granulated sugar, baking powder, and cinnamon until a batter forms.
Gently fold in the chocolate chips.
Use a large cookie scoop to portion the batter into 10-11 cookies on the prepared baking sheet. If you prefer smaller cookies, adjust the scoop size accordingly.
Bake the cookies in the preheated oven for about 15 minutes or until they are golden brown and set.
Once baked, allow the cookies to cool on a wire rack.
Optional: Top the cooled cookies with vanilla frosting and sprinkles.
