Delightful Homemade Sugar Cookie Creations
Ingredients
- 2 cups almond flour
- 1/4 cup all-purpose flour (gluten-free 1:1 baking flour can be used)
- 1/2 cup coconut sugar
- 1 tsp. baking powder
- 1 egg
- 1/4 cup nut butter
- 1/4 cup almond milk
Preparation
Preheat the oven to 350°F and prepare a baking sheet by spraying or lining it.
In a large bowl, whisk together the dry ingredients: almond flour, all-purpose flour, coconut sugar, and baking powder.
In a small bowl, whisk together the wet ingredients: egg, nut butter, and almond milk.
Pour the wet ingredients into the bowl with the dry ingredients and stir until a well-combined dough forms.
Lightly dust your countertop with additional all-purpose flour and roll out the cookie dough.
Use a regular-sized cookie cutter to shape 13-15 cookies, or a mini cookie cutter to make 38-40 smaller cookies.
Place the shaped cookies on the prepared baking sheet.
Bake the regular-sized cookies for 8-10 minutes and the mini cookies for 5 minutes, or until the edges are lightly golden.
Once baked, remove the cookies from the oven and let them cool on a wire rack.
Decorate the cooled cookies with your choice of vanilla frosting and sprinkles, and consider piping snowmen designs for a festive touch.
