Cinnamon Pear Hand Pies
Ingredients
- 1 1/2 cups all-purpose flour (gluten-free 1:1 baking flour can be used)
- 2 tbsp. coconut sugar
- 1 tsp. baking powder
- 3/4 cup + 2 tbsp. almond milk
- 1/2 cup diced pears
- 1 tsp. cinnamon
- 2 tbsp. coconut sugar
- Melted butter (for coating)
- Frosting (optional, for topping)
- Extra coconut sugar (for topping)
Preparation
Preheat oven to 350°F (175°C) and line a baking sheet.
In a large bowl, whisk together the flour, baking powder, and coconut sugar. Stir in the almond milk, using your hands to form a dough ball.
On a lightly floured surface, flatten the dough and cut out 8 circles using a large circle cookie cutter or a wide-rimmed cup.
Place small amounts of the diced pear filling in the center of 4 circles. Carefully place the remaining dough circles on top and use a fork to seal the edges.
Place the hand pies on the baking sheet. Lightly coat the tops with melted butter.
Bake for 13 minutes until golden brown.
Optional: Top with frosting and extra coconut sugar before serving.
