Cinnamon Pear Hand Pies

Ingredients

  • 1 1/2 cups all-purpose flour (gluten-free 1:1 baking flour can be used)
  • 2 tbsp. coconut sugar
  • 1 tsp. baking powder
  • 3/4 cup + 2 tbsp. almond milk
  • 1/2 cup diced pears
  • 1 tsp. cinnamon
  • 2 tbsp. coconut sugar
  • Melted butter (for coating)
  • Frosting (optional, for topping)
  • Extra coconut sugar (for topping)

Preparation

  1. Preheat oven to 350°F (175°C) and line a baking sheet.

  2. In a large bowl, whisk together the flour, baking powder, and coconut sugar. Stir in the almond milk, using your hands to form a dough ball.

  3. On a lightly floured surface, flatten the dough and cut out 8 circles using a large circle cookie cutter or a wide-rimmed cup.

  4. Place small amounts of the diced pear filling in the center of 4 circles. Carefully place the remaining dough circles on top and use a fork to seal the edges.

  5. Place the hand pies on the baking sheet. Lightly coat the tops with melted butter.

  6. Bake for 13 minutes until golden brown.

  7. Optional: Top with frosting and extra coconut sugar before serving.
