Gluten-Free Almond Flour Sugar Cookies with Coconut Frosting

Ingredients

  • 2 cups almond flour
  • 1/4 cup all-purpose flour (gluten-free 1:1 baking flour)
  • 1/2 cup coconut sugar
  • 1 tsp. baking powder
  • 1 egg
  • 1/4 cup nut butter
  • 1/4 cup almond milk

Preparation

  1. Preheat the oven to 350°F and prepare a baking sheet with cooking spray or parchment paper.

  2. In a large bowl, whisk together the almond flour, all-purpose flour, coconut sugar, and baking powder.

  3. In a separate small bowl, whisk together the egg, nut butter, and almond milk until well combined.

  4. Pour the wet ingredients into the dry ingredients and stir until a cohesive dough forms.

  5. Lightly dust your countertop with extra all-purpose flour and roll out the cookie dough.

  6. Use your choice of cookie cutters to shape the dough into 13-15 normal-sized cookies or 38-40 mini cookies.

  7. Place the cookies onto the prepared baking sheet and bake normal-sized cookies for 8-10 minutes and mini cookies for 5 minutes, or until the edges are lightly golden.

  8. Once baked, let the cookies cool on a wire rack.
