Cinnamon Streusel Banana Muffins

Ingredients

  • 2 small ripe bananas {1/2 cup mashed}
  • 1/2 cup plain or vanilla yogurt
  • 2 eggs
  • 1/2 cup coconut sugar
  • 1/2 cup cassava flour {or all purpose flour}
  • 1 cup almond flour
  • 1/2 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/3 cup melted butter {i used @kitehillfoods plant based butter}
  • 1/2 cup cassava flour {or all purpose flour}
  • 1/3 cup coconut sugar
  • 1 tsp. cinnamon

Preparation

  1. Preheat oven to 350F and spray/line a muffin tin

  2. In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients

  3. Pour the batter into the muffin tin {makes 12 muffins} & top with crumb mixture. {recipe below}

  4. Bake for 18 minutes

  5. Crumb topping: just stir everything together and crumble on top of muffins before baking
