Cinnamon Streusel Banana Muffins
Ingredients
- 2 small ripe bananas {1/2 cup mashed}
- 1/2 cup plain or vanilla yogurt
- 2 eggs
- 1/2 cup coconut sugar
- 1/2 cup cassava flour {or all purpose flour}
- 1 cup almond flour
- 1/2 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/3 cup melted butter {i used @kitehillfoods plant based butter}
- 1/2 cup cassava flour {or all purpose flour}
- 1/3 cup coconut sugar
- 1 tsp. cinnamon
Preparation
Preheat oven to 350F and spray/line a muffin tin
In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients
Pour the batter into the muffin tin {makes 12 muffins} & top with crumb mixture. {recipe below}
Bake for 18 minutes
Crumb topping: just stir everything together and crumble on top of muffins before baking
