Cinnamon Streusel Banana Muffins
Ingredients
- 2 small ripe bananas (1/2 cup mashed)
- 1/2 cup plain or vanilla yogurt
- 2 eggs
- 1/2 cup coconut sugar
- 1/2 cup cassava flour or all purpose flour
- 1 cup almond flour
- 1/2 tsp. cinnamon
- 1/2 tsp. baking powder
Crumb topping
- 1/3 cup melted butter (I used @kitehillfoods plant based butter)
- 1/2 cup cassava flour or all purpose flour
- 1/3 cup coconut sugar
- 1 tsp. cinnamon
Preparation
Preheat oven to 350F and spray or line a muffin tin.
In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients.
Stir together the crumb topping ingredients until combined.
Pour the batter into the muffin tin, top with the crumb mixture, and bake for 18 minutes.
