5-Minute Healthy Mug Cinnamon Rolls

Ingredients

Dough

  • 1/2 of a large banana
  • 4 to 6 tbsp all purpose flour + more if needed
  • 3/4 of a tsp baking powder
  • 1 tsp soft coconut oil
  • 1 tablespoon plant milk only if needed (start with less or none and add as needed)

Filling

  • 1 tablespoon coconut sugar
  • 1 tsp cinnamon
  • Coconut oil for brushing

Caramel

  • 1 heaping tablespoon coconut sugar
  • 1 tablespoon coconut milk cream (hardened thick white part on top of chilled or unshaken can)
  • Pinch salt

Preparation

  1. Mix dough ingredients together in a bowl until a thick dough forms, ensuring not to over-mix. If too much plant milk is added, incorporate more flour until the dough is thick but may be slightly sticky.

  2. Roll out the dough with hands on a floured surface, sprinkling flour on the dough and hands to prevent sticking, and avoid rolling it too thin.

  3. Brush the dough with melted coconut oil.

  4. Sprinkle the cinnamon sugar mixture on top and gently press it to avoid spilling.

  5. Roll up the dough and cut it into 3 equal slices.

  6. In a large, tall mug, stir together the coconut sugar, coconut milk cream, and salt, then place the sliced cinnamon rolls on top.

  7. Microwave for about 90 seconds; microwave times may vary. Let cool slightly before enjoying.

Tips

  1. Double the caramel ingredients if you prefer more caramel.

  2. Use a mug that is not too tall to avoid spilling during cooking, as a larger mug was used in the demonstration and caused issues.
