Breakfast Carrot Cake
Ingredients
- 2/3 cup flour (spelt flour used here)
- 1/2 cup shredded carrot
- 1/3 cup plant milk (or slightly more)
- 1/2 mashed banana
- 2 tbsp salted caramel protein powder (optional, @unicornsuperfoods brand)
- 2 tbsp chopped walnuts
- 1 tbsp maple syrup
- 1/2 tsp baking powder + a squeeze of lemon
- 1/3 tsp cinnamon
- 2 tbsp vegan cream cheese
Preparation
Mix all the ingredients together (except cream cheese).
Pour half of the batter into a small ramekin.
Add vegan cream cheese to the ramekin and cover it with the remaining batter.
Bake at 360°F for about 30 minutes.
