Breakfast Carrot Cake

Ingredients

  • 2/3 cup flour (spelt flour used here)
  • 1/2 cup shredded carrot
  • 1/3 cup plant milk (or slightly more)
  • 1/2 mashed banana
  • 2 tbsp salted caramel protein powder (optional, @unicornsuperfoods brand)
  • 2 tbsp chopped walnuts
  • 1 tbsp maple syrup
  • 1/2 tsp baking powder + a squeeze of lemon
  • 1/3 tsp cinnamon
  • 2 tbsp vegan cream cheese

Preparation

  1. Mix all the ingredients together (except cream cheese).

  2. Pour half of the batter into a small ramekin.

  3. Add vegan cream cheese to the ramekin and cover it with the remaining batter.

  4. Bake at 360°F for about 30 minutes.

  5. Enjoy!
