5 Minute Mug Cinnamon Rolls
Ingredients
Dough
- 1/2 of a large banana
- 6 tbsp all purpose flour (paleo, gf, or regular all work!) + more if needed
- 1 tsp baking powder
- 1-4 tablespoons almond milk (adjust based on flour type)
Filling
- 1 tablespoon coconut sugar
- 1 tsp cinnamon
- Coconut oil for brushing
Caramel
- 1 heaping tablespoon coconut sugar
- 1 tablespoon coconut milk cream (hardened thick white part on top of chilled or unshaken can)
- Pinch salt
Preparation
Mix the dough ingredients together in a bowl until a thick dough forms and adjust almond milk based on flour type.
Mix the cinnamon and sugar for the filling.
Roll out the dough with hands on a floured surface, sprinkling flour on dough and hands to prevent sticking, and do not roll it too thin.
Brush the dough with melted coconut oil.
Pour the cinnamon sugar mixture on top and gently press it to avoid spilling.
Roll up the dough and cut it into 3 equal slices.
In a large, tall mug, stir together the coconut sugar, coconut milk cream, and a pinch of salt for the caramel.
Place the sliced cinnamon rolls on top of the caramel mixture.
Microwave for about 90 seconds.
Let cool slightly before enjoying.
Tips
Microwave times may vary, so adjust as needed.
Use a large, tall mug to help prevent the caramel from spilling.
Different brands of flour may require adjustments in the amount of almond milk used.
