Waffles with Whipped Cream and Berries

Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • pinch of salt
  • 3 tablespoons coconut sugar
  • 1 1/4 cups almond milk
  • 2 tablespoons coconut oil
  • 2 teaspoons vanilla extract

Preparation

  1. In a large bowl, whisk together the flour, baking powder, salt, and coconut sugar.

  2. In another bowl, combine the almond milk, melted coconut oil, and vanilla extract.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.

  4. Preheat a waffle iron and lightly grease if necessary.

  5. Pour batter onto the waffle iron and cook according to the manufacturer's instructions until golden and crisp.

  6. Serve warm with whipped cream and fresh berries.
