Vanilla Chocolate Chip Pancakes

Ingredients

  • 1 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1 + 1/4 cup plain flour
  • 2 tbsp vanilla protein powder
  • 2 tbsp coconut sugar
  • a pinch of salt
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 cup chocolate chips

Preparation

  1. Mix almond milk and apple cider vinegar and set aside for 5 minutes to make vegan buttermilk

  2. In a large bowl mix all dry ingredients except the chocolate chips

  3. Add the buttermilk and stir to incorporate

  4. Carefully fold the chocolate chips in

  5. Preheat a non-stick pan at medium heat

  6. Bake the pancakes using 1.5-2 tablespoons of batter each for 1-2 minutes per side

Serving suggestions

  1. Serve warm with a good amount of maple syrup, homemade vegan nutella, and fresh blueberries
