Vanilla Chocolate Chip Pancakes
Ingredients
- 1 cup almond milk
- 1 tbsp apple cider vinegar
- 1 + 1/4 cup plain flour
- 2 tbsp vanilla protein powder
- 2 tbsp coconut sugar
- a pinch of salt
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/2 cup chocolate chips
Preparation
Mix almond milk and apple cider vinegar and set aside for 5 minutes to make vegan buttermilk
In a large bowl mix all dry ingredients except the chocolate chips
Add the buttermilk and stir to incorporate
Carefully fold the chocolate chips in
Preheat a non-stick pan at medium heat
Bake the pancakes using 1.5-2 tablespoons of batter each for 1-2 minutes per side
Serving suggestions
Serve warm with a good amount of maple syrup, homemade vegan nutella, and fresh blueberries
