Diner Style Vegan Pancakes

Ingredients

  • 2 1/2 cups all purpose flour
  • 1/2 cup white rice flour (or same in flour)
  • 3 Tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 cups non-dairy milk
  • 1 Tbsp apple cider vinegar
  • 2 Tbsp golden ground flax (or 1/2 cup applesauce)
  • 1 tsp vanilla
  • 4 Tbsp Earth Balance

Preparation

  1. Mix together the milk, vinegar, vanilla, and flax. Let sit while you prepare the other ingredients.

  2. In a large bowl mix together the flour, sugar, salt, baking powder and soda.

  3. Melt the butter.

  4. Pour in the milk mixture, fold a few times making sure to scrape the bottom of the bowl to get the flour on the bottom.

  5. Mix in the melted butter until the batter is mostly smooth with a few small clumps. You don't want to overmix.

  6. Let sit while you heat your griddle or pan.

  7. Melt a little butter on your cooking surface and measure out 1/4 cup batter per pancake.

Tips

  1. You can substitute the white rice flour with the same amount of all-purpose flour.

  2. Make them gluten-free by substituting the all-purpose flour with a 1:1 gluten-free flour blend.
