Diner Style Vegan Pancakes
Ingredients
- 2 1/2 cups all purpose flour
- 1/2 cup white rice flour (or same in flour)
- 3 Tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 1/2 cups non-dairy milk
- 1 Tbsp apple cider vinegar
- 2 Tbsp golden ground flax (or 1/2 cup applesauce)
- 1 tsp vanilla
- 4 Tbsp Earth Balance
Preparation
Mix together the milk, vinegar, vanilla, and flax. Let sit while you prepare the other ingredients.
In a large bowl mix together the flour, sugar, salt, baking powder and soda.
Melt the butter.
Pour in the milk mixture, fold a few times making sure to scrape the bottom of the bowl to get the flour on the bottom.
Mix in the melted butter until the batter is mostly smooth with a few small clumps. You don't want to overmix.
Let sit while you heat your griddle or pan.
Melt a little butter on your cooking surface and measure out 1/4 cup batter per pancake.
Tips
You can substitute the white rice flour with the same amount of all-purpose flour.
Make them gluten-free by substituting the all-purpose flour with a 1:1 gluten-free flour blend.
