Vegan Sheet Pan Pancakes

Ingredients

  • 550 ml plant milk (2 1/4 cups)
  • 3 tbsp maple syrup
  • 3 tbsp apple cider vinegar
  • 1.5 tbsp vanilla
  • 375 g oat flour (3 1/3 cups)
  • 3 tbsp baking powder
  • 3/4 tsp salt

Toppings

  • strawberries
  • bananas
  • chocolate chips
  • blueberries
  • and more

Preparation

  1. Make your vegan buttermilk by mixing your wet ingredients together. Let that sit for 5 minutes to curdle.

  2. Mix together your dry ingredients, add in the vegan buttermilk, whisk until most of the lumps are gone, but don’t over mix or this will lead to flat pancakes!

  3. Let the batter sit for 5 minutes then spread out onto a greased baking sheet.

  4. Add on your favorite toppings and bake at 425 degrees for 15-20 minutes until golden.

  5. Enjoy!
