Blue Spirulina Oat Pancakes

Ingredients

  • 175 g oat flour
  • 80 ml almond milk
  • 1 banana
  • 2 tsp coconut oil
  • 2 tsp baking powder
  • 1 tsp blue spirulina
  • 2 chia eggs
  • 2 tbsp maple syrup

Toppings

  • coconut yoghurt
  • blueberries
  • cocoa nibs

Preparation

  1. Prepare chia eggs by mixing chia seeds with water and letting them sit until gel-like.

  2. In a bowl, combine oat flour, baking powder, and blue spirulina.

  3. Mash the banana and mix it with almond milk, coconut oil, maple syrup, and chia eggs.

  4. Stir the wet ingredients into the dry ingredients to form a smooth batter.

  5. Heat a skillet over medium heat and add a bit of coconut oil.

  6. Pour batter onto the skillet to make pancakes and cook until bubbles appear, then flip and cook until golden.

  7. Top with coconut yoghurt, blueberries, and cocoa nibs before serving.
