Vegan Gluten-Free Red Velvet Pancakes

Ingredients

  • 175g oat flour
  • 80ml almond milk
  • 2 cooked red beetroots
  • 2 tsp coconut oil
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 2 chia eggs
  • 2 tbsp maple syrup

Toppings

  • coconut yoghurt
  • granola
  • shredded coconut

Preparation

  1. Blend the cooked beetroots with almond milk until pureed.

  2. Add the remaining ingredients and stir together.

  3. Heat some oil in a frying pan.

  4. Cook the pancakes for about 3 minutes per side.

  5. Stack the pancakes, add toppings, and serve.
